Forgot about jellyfish! Mine was dried, and in a soup, kind of like shark fin. I've also eaten shark fin, but that was almost 20 years ago when I was ignorant to the entire poaching, food chain importance of sharks. Never again will I eat shark anything.
I ate kangaroo loin, grilled rare, rolled in honey, then rolled again in roasted pistachios. Very "elk" like. Lean, and simple.
Bear was pepperoni format, honestly could have been anything.

I roast a whole pig over charcoal once per year. Eating the face is one of the highlights. People who have done it know what I'm saying. The cheek meat, jowls, around the ear, behind the eyes, it's all so tender.
Plus, when you crack the skull and get into the brain. Imagine if foie gras tasted like pork.
Then you break down the belly, the ribs, the legs. It's all good.
