PS problem

OK, so ive got a problem, and i cant find the answer to it. Well, I was about to start a new sig, and i make a new canvas like how you normally would, then when i pasted my stock in, its automatically black and white. I ddidnt have any Adj. Layers on, and its happened to me before, I just can't figure out how to fix it again. So now, anything I paste in there is greyscale, even the text (hence the B&W Captain Kirk Sig). So I just need help turning my colour back on.

It usually does that if the first thing you open is b/w.

heres another one for you PS pros, just so i dont have to start a thread, i have a couple pictures that i wanted to change up. you know those canucks ads where they always add a greenish bluish tinge to it? how would you go about for that effect? colour adjustment didnt go so well, nooby me =P
