If the found weapons were the best in the game, nobody would bother smithing and enchanting (and using alchemy to a lesser extent), though, thus making those skills useless.
There's still a ton of reasons why you would want to adventure and explore. If the side quests and the stories associated with them aren't a good reason for you to explore, then I don't know what to say.
Did the lack of smithing/enchanting ruin your Fallout experience? (if you had one)
I am not saying to take it out, I just don't like that it's the ultimate option. I like the option to be able to improve my weapons like dawnbreaker via smith. What I don't like is how Dawnbreaker is vender trash compared to a crafted Daedric Sword with a fire and lightning enchant that I can make without ever leaving whiterun. It's one thing to be able to make gear that fills some holes, another all together that not making that gear reduces your power. Sure, I play for the story, but also the rewards of loot that improves my character.
