McBackup
I don't know if this counts technically as a cover, because its Slash, but Myles Kennedy does a better job than Axl Rose.
D-Money
I Fought The Law by The Clash is my all-time favourite. Second would be China Girl by Bowie (even though he cowrote, played on, and produced the original by Pop). I Love Rock and Roll by Joan Jett and the Blackhearts is up there. Mostly because they took an obscure, overlooked song and made it legendary. Same with Tainted Love by Soft Cell. Superstar twice - the Sonic Youth version of my favourite Carpenters song is one of them. Then I found out The Carpenters' version was a cover in the first place. Others: Nothing Compares 2 U - Sinead O'Connor Walk This Way - Run DMC Respect - Aretha Franklin Love Hurts - Nazareth Me and Bobby McGee - Janis Joplin
D-Money
These have been fairly recent covers that I enjoyed. Not all-time favourites, but still worth a listen: My Boyfriend's Back - The Raveonettes I Love My Label - Wilco I Just Don't Know What to Do with Myself - White Stripes Mah Na Mah Na - Cake John the Revelator - Depeche Mode
