Per Pound Mixture:

11.2 ounces Beef Blade Roast

4.8 ounces Short Rib

 

I’ve moved away from smash burgers to 5oz or 5.5oz paddies. They taste amazing.

It’s frickin expensive (when you throw in the short ribs), but it tastes like heaven. My burgers were already (in my mind) better than restaurant quality, but this just put it into another stratosphere. 

 

I also insist on only using brioche buns.

Well if you insist on Brioche, you've gone too far.

Just sayin

 

I'll use that burger mix, but add some gnarly to it!

 

On a pretzel bun or Kaiser because my patties are 8oz-ish

I love Brioche. Can’t have any other bun anymore.

 

I really dislike Kaiser.

 

Honestly, never tried Pretzel bun. I’ve wanted to, but I like the softness of a Brioche. Also want majority of my meal to come from the meat and toppings. The bun needs some flavor, but not so much to it that eating the bun alone would make me full. Which is how other buns make me feel.

Made this yesterday, which my father used to make when I was growing up. It was great when he made it, but I added 2 other ingredients to make it my own. This is definitely a “trade secret” recipe that I’ll be passing down to my kids.
