Eating healthier is both exciting and depressing at the same time.

When I worked and reluctantly (she tried to kill me) trained with a super fit former body builder her go to meal almost daily was quinoa, spinach, cherry tomatoes, lean chicken and a bit of seasoning (I used smoked paprika). Simple but good!
She also got me on no fat plain yogurt...I'd add walnuts, bananas and a bit of maple syrup.
