@Monty

Bought myself a large cast iron skillet and did rib eye steaks;

in a marinade of:

apple cider vinegar

olive oil

worsteshire sauce

salt an pepper

roast russets

chic pea, avocado, grape tomato, feta salad

it was the first time I’ve used apple cider in a steak marinade and I won’t repeat.  It was good but not excellent.

today however!  Wow!

Used the leftover steak, bought mushrooms, green peppers, onion, garlic, Serrano pepper, and jack/mozzarella/cheddar mix

threw it all in the skillet and then on a crusty sub bun for lunch.

insane good.

Nice! Glad it worked out.

I’ve never even thought to use Apple Cider Vinegar for a marinade.

My next step in good is going to be Sous Vide. Waiting until may for that purchase. But unless I’m cooking for a lot of people, I’m not going back to the BBQ, always cast iron. Unless I get a flat top grill, which is also the long term plan.

The flat top grill is fantastic.  I have had a brick fixed bbq/flat grill before years ago.

definitely vouch for it.

Every Sunday has turned into “Pasta Sunday.” I start the night before by making a couple batches of fresh noodles now, so I can freeze the rest, while I use a pound of it the next day for pasta. Giving my kids the lifetime memory of home cooked pasta.

Marry me!

For dinner tonight, like at 4:45 CST, I asked my wife and 3 year old daughter what they wanted for dinner. Wife said Eggs Benedict, daughter said pancakes.

Was able to get that all sorted and on the table by 5:30.

Sweet!

When going out for breakfast I often order eggs Benedict because I never eat that home.

Usually have to order something else to go along with it. Like pancakes!

Eggs Benedict is surprisingly easy to make. The Hollandaise sauce is quite simple
