And I honestly think the video is fake. The movement is a little too artificial and not at all natural, IMO. It's a hoax, in my mind.

Yup, see this all the time with fish. Clean the fish, pour some salt on it, and it'll arch it's back like it's trying to dance! Very interesting. Pretty sure the first time my mother saw it she almost had a heart attack! Was too funny!

Camera pans away immediately after hitting the floor. The camera would stay focused on it to see if it kept crawling.

 

I think you're overestimating the camera skills of average people.

Anything freshly killed that is lean and stringy. My guess is it was rabbit or hare.
