ronthecivil Posted September 17, 2012 Share Posted September 17, 2012 Smoked salmon (ideally caught by local person off the west coast of Van Isle) that is smoked in a homemade smoker (like the former fridge my granpa used to smoke his fish in) such that the fish is very much wild fish and the smokiness level is set to "off the charts" after a couple days in the smoker. No sweetness I am not looking for indian candy I want uber smokey. Obviously with cedar. Also I like to make smoked (hickory) roasts which I can at least do in the BBQ with indirect heating which if you catch the drippings makes a rather wicked smoked gravy to go with it. When not eating smoked a nice rare tenderloin thick cut and flash cut on the infrared BBQ is also very nice. For drink beer of course. Link to comment Share on other sites More sharing options...
