Never skied over here, as the Missus has never been into it.

Think I read Biwako Valley might have what you're lookin for? We were just out there last wknd..Japan's largest lake(Lake Biwa) in nearby, Shiga Prefecture. Great swimming in July/Aug.

Love cycling in Shiga; in winter their northern region gets fairly cold/snowy. I don't think it gets deserving fanfare from Intl tourists, as neighbouring Kyoto & Osaka attract the majority of Kansai area travellers/interest.

Wife also mentioned Gifu Prefecture(next to Shiga), as having a lot of resorts. However that might be more of a snowboarder's haven?

thanks, I appreciate that. Its actually not that easy to find info on nordic skiing in Japan, not even sure what the word for it is there. 

We'd actually like something a bit off the beaten track, than a big report.
