I made bastardized Gyros tonight.

Basically made a meatloaf with ground beef and ground pork, egg, breadcrumbs

greek-style-seasoned the $&!# out of it

made a loaf and convection baked it to ensure some crispy bits

Cut the loaf into pucks then half mooned the pucks

Loaded em heavily on naan, lots of tzatziki, tomatoes and red onion; wrapped like a boss in parchment paper so the kids do make a giant &^@#ing mess.

Served with Greek salad on a bed of baby spinach.

Was actually really damn good. Tasted just as good as authentic rotisserie style, mixed mystery meat Gyros.

Kids loved it and the wife and I will both take leftovers for lunch tomorrow.

(For my Greek salad, I got to use some of the cannabis infused olive oil I made last night as part of the dressing, and it's kicking in. It is good.)

Perfect fall meal!

I perfected a few meals that I kept going back to, but finally decided to table some of them, as they were far more seasonal than others. My pasta recipe that will be one I pass down to my children and their children is certainly a winter meal.

I had never made a stew before, but decided it would be smart to have this in my rotation, as it’s affordable, healthy, and easy. For my first stew, it was amazing. I did want to use a cup of beer or wine in the stew; however, even though all the alcohol evaporates, I didn’t want to take the chance with my wife being pregnant. Better to be safe than sorry. I also used Russet potatoes, which are my favourite. Thinking I’ll try Yukon Gold next time, just to see if that changes the taste at all.

You just marked all my check boxes  :)

I use red potatoes. Just feels like a richer taste to me.

Nothing like going for a walk in the cool, crisp fall air. And then returning home to a kitchen that smells of stew in the slow cooker.

I entertained a vegan guest on Saturday

Roasted caramelized butternut squash

Jasmine rice and black beans seasoned with fresh lime juice and Cilantro

And then I ate a nice big rack of ribs right in front of her  lol

Dessert was coconut whipped cream over fresh strawberries, blueberries. With raspberry coulis drizzle.  (didn't have that until breakfast B) )
