I always enjoy blackened Cajun chicken,
I usually cut my chicken breasts into 2-3 thinner pieces,
Mix together onion powder, garlic powder, dash of salt, pepper, paprika, thyme, ground mustard
Coat breasts in olive oil, rub in the spices.. After it's on I do a few dashes of clubhouse "Cajun" spice, then mix in a bit of lime juice.
Heat a frying pan on high for 5-7 minutes, toss the breasts in for 1-2 minutes a side, then throw it in the oven at 350 for 10 minutes. Or if I'm feeling lazy I just toss them in the George Forman for a bit.. But they're not so "blackened" when I do that.
Tastes great with some tzatziki sauce and a side of quinoa and veggies.
